Sweet Potato Kale Soup

This hearty and delicious soup is perfect for warming up on those cold winter days. It’s an easy, nutritious, one-pot meal. Serve with a dollop of yogurt and your favorite bread.

Ingredients:

2 tablespoons ghee

1 large yellow onion, chopped

1 large, sweet potato diced

2 tbsp curry powder

4 cups vegetable or bone broth

½ bunch of kale chopped (about 3 cups)

Salt and pepper to taste

Directions:

In a large saucepan, heat the ghee over medium heat add in the onion and sauté until soft. Add in sweet potatoes and curry powder and stir until the vegetables are coated and the curry is fragrant, about 1 minute. Add the vegetable broth and bring to a lite boil, then reduce the heat to a simmer and cook for 25 minutes. Add in kale and cook for 5 more minutes, or until the kale is cooked to your liking. Ladle the soup into bowls and serve. Salt and pepper to taste.

Instant Pot Instruction:

Press the sauté button on the Instant Pot and add ghee and onions sauté for 5 minutes. Cancel the sauté function and add in sweet potatoes and curry powder and stir until the vegetables are coated and the curry is fragrant, about 1 minute. Add in the broth and kale. Secure the lid and turn the steam release knob to the sealing position. Choose the "Pressure cook" function and manually set the timer for 5 minutes. When cooking time is up, let the pressure come down naturally (slow release). Once the pressure is released, remove the lid. Ladle the soup into bowls and serve. Salt and pepper to taste.
