Beet Soup
Ingredients:
3-4 medium sized beets roughly chopped
2 leeks chopped (white parts only)
2 inch piece of ginger chopped
2 tbsp ghee
1 tbsp rosemary (fresh or dried)
15 oz goat cheese (optional)
To make it vegan or dairy free version add 1 cup of chopped cauliflower for a smooth consistency
Directions:
Rinse, scrub, and clean the beets well, then roughly chop and set aside. Add ghee and leeks into a medium size saucepan and sauté on medium heat. Once soft, add in the ginger, beets, and enough water to cover the beets. Bring to a boil and then reduce heat to a lite boil for about 20-30 minutes, or until you can pierce the beets with a fork. Turn off the heat and let the beets sit for 10-15 minutes. Using an immersion blender, blend the beets with the cooking water, and add the rosemary. If using a blender, transfer the beets and cooking water into the blender in small batches until it is well blended. Be cautious; the heat can cause the lid to come off the top of the blender. Once blended, add the goat cheese (if using) and blend until mixed well. It will have a smooth consistency, salt, and pepper to taste. Serve and enjoy.
Instant Pot Instructions:
Press the sauté button on the Instant Pot and add ghee and leeks sauté for 5 minutes. Cancel the sauté function and add the ginger, beets, and enough water to cover the beets. Secure the lid and turn the steam release knob to the sealing position. Choose the "Pressure cook" button and manually set the timer for 8 minutes. When cooking time is up, let the pressure come down naturally (slow release). Once the pressure is released, remove the lid. Using an immersion blender, blend the beets with the cooking water, and add the rosemary. If using a blender, transfer the beets and cooking water into the blender in small batches until it is well blended. Be cautious; the heat can cause the lid to come off the top of the blender. Once blended, add the goat cheese (if using) and blend until mixed well. It will have a smooth consistency, salt, and pepper to taste. Serve and enjoy.
