apple season is here
One of my favorite things about this time of year is apples. When they begin to come out towards the end of August, I eat them until October. Apples remove heat that accumulates in the body from summer, acting as a purgative promoting elimination. Once again, nature gives us what we need to balance the body. If you are prone to gas or bloating, cook or stew your apples to enjoy their therapeutic benefits. Apples are also high in pectin, a type of fiber that feeds the good microbes in your gut, and apples help to balance weight and blood sugar levels. When cinnamon and apples are combined, they balance out the brown sugar used in this recipe and balance the blood sugar levels. Cardamom and ginger aid in the digestion of sweets and heavy-to-digest foods, and ghee and coconut oil are good healthy fats. This apple crisp recipe is not your traditional recipe, but it is one of our favorite ways to enjoy apples. We have had it several times in the last few weeks as a healthier alternative to dessert. Apple Crisp
4 cups apples - peeled, cored, and diced
1 tbsp coconut oil
2 tbsp maple syrup
1 tsp ground cinnamon
½ tsp ground cardamom
½ tsp ground ginger
2 cups old fashioned oats
¼ cup dark brown sugar
4 tbsp ghee
Preheat the oven to 350 degrees. Lightly grease an 8-inch baking dish or oven-safe dish. Place diced apples into a mixing bowl and add coconut oil and maple syrup. Mix gently to coat apples in oil and syrup. Add in spices and gently mix to coat apples in spices. Place the apples into the baking dish and evenly distribute the apples. In the same mixing bowl, add the oats and brown sugar, and gently mix the oats and brown sugar with a spatula scraping up any spices left behind from the apples. Add in 2 tbsp of ghee and gently mix again. Sprinkle the oat mixture on the apples and evenly distribute the mixture. Dollop the remaining ghee on top of the oats, evenly distribute the ghee, and bake for 40 minutes. Cool slightly before serving.
